I finally bought a machine which can make yogurt and Amazake. For the longest time, I’ve been hesitating to buy it because because I couldn’t find a suitable one. Sometimes I would check Amazon, compare several machines, but I couldn’t decide. No machine impelled me to make a purchase.
Why did I finally decide to buy? There are 2 reasons.
The first reason is to take care of my health. I have a passion for fermented foods, especially Nuka zuke and Amazake. I recently, started making homemade pickles, called Nukazuke in Japanese. It’s vegetables that have been pickled in malted rice bran. (I also bought the white enameled Nukazuke container several months ago.) Amazake is a traditional Japanese fermented super drink. It’s rich in enzymes and probiotics. It’s sweet, tasty and high in nutrition. The process of making Amazake is simple but not so easy. Koji(malted- rice) and steamed rice are mixed together and kept for 10 hours at 60 degrees. Ordinary pots or container are unable to keep a constant temperature of 60 degrees for 10 hours.
The second reason is because I got a discount coupon from Amazon. The 1500 yen discount coupon ①impelled me to buy something from Amazon.
Now I have ③an ace in the hole that will make it easier to make AMAZAKE! It’s the machine I bought! I’m looking forward to making and eating my original yogurt and amazake this weekend.
